Full-sized ones are for more popular or more often used ingredients, and smaller ones are for less-used ingredients, simply to avoid an ingredient sitting in the pan for a long time. Multiples of each size are helpful for use in prep tables so they can be switched out quickly when empty. We also carry covers for these containers, both notched—for a spoon—and solid.
