They’re very similar actually. It’s just a matter of the amount of power they have. A cheesemelter is a little less powerful than a broiler. It delivers direct heat from top elements, rather than radiant heat (like in a salamander), so it is generally used for less demanding tasks, such as (you guessed it) melting cheese. It can melt cheese on the top of nachos, or french onion soup, or it can also be used as a plate warmer, before or after the food has been put on it.
